Summary:
canola oil gel was prepared by using candlestick wax as gel. The effects of candlestick wax content on phase change, oil holding capacity, solid fat content,SFC), gel crystal form and hardness of oil gel were studied. The experimental results show that when the mass fraction of candle wax is ≥ 4%, the oil gel with solid properties can be prepared by adding canola oil, and when the mass fraction is 8%, the oil holding capacity (oil binding capacity,OBC) is the strongest; crystal form analysis shows that the main crystal forms of candlestick wax canola oil gel are all around 4.70 × 10 (-10) and 3.80 × 10 (-10) m. The hardness of oil gel gradually increases with the increase of candlestick wax content, and the hardness of candlestick wax oil gel is moderate when the mass fraction is 10%.
